Gluten is a protein composite found in wheat and related grains, including barley and rye. Gluten gives elasticity to dough, helping it rise and keep its shape and often gives the final product a chewy texture. This is why gluten free foods are less chewy and more crumbly.
Gluten isn’t necessarily bad, but some people are gluten-intolerant, meaning their bodies produce an abnormal immune response when it breaks down gluten from wheat and related grains during digestion.
The most common gluten intolerance is celiac disease. When someone with celiac disease consumes gluten, it triggers and immune response that damages their intestines, preventing them from absorbing vital nutrients.
Symptoms of gluten intolerance:
– Abdominal bloating
– Migraine headaches
– Joint pain
– Bowel inconsistency
– Chronic irritability
Even if you have gone to a doctor to get tested for gluten intolerance and it came out negative, you could still be gluten sensitive if you have some of the signs listed above.
Steps to determine if you are gluten sensitive:
– Eliminate all foods that contain gluten from your diet for 2 weeks. Keep track of your symptoms in a food journal and note any changes that occur over the 2 weeks.
– After the 2 weeks, reintroduce gluten into your diet slowly. Note how you feel after eating it in your journal and how it affects your body. If you notice any of the above symptoms you are probably gluten sensitive and should continue cutting it out of your diet for good.
